Harvested each year in the same garden as the Da Xue Shan teas for pre-order, this tea has remarkable qualities. The material for the tea cakes comes from 150-200-year-old tea trees, processed by an expert in an experienced factory. Aged in Kunming all the time since 2006. The brew is clear and transparent, more on the elegant ruby side than on the very brown one. Happy to share this rarety with you.
After the first infusion, the aroma is woody, sweet and leathery, with a very fine icing of cocoa powder, as if melted on milk barley. The flavour is clean and sweet, light yet rich, well balanced and immediately enjoyable.
In the second infusion, the flavour becomes even deeper, woodier and softer, while retaining the leathery and sweet notes. The tea "pleasantly soothes the stomach, bringing a warm calm to it". The aroma remains attractive and the flavour is rich and harmonious, creating a very calming effect.
The whole experience of the tea is "like being taken into an old house (not neglected) and seeing the beauty in ageing. It has a patina - it has aged beautifully". The magic and beauty of ageing is fully infused into the flavour, making every sip a new discovery.
Quantity: 5-6 grams of tea to 150 ml of water
Water temperature: 85ºC. From fresh spring water, mineral water or filtered water
Infusion time: 3-5-7...seconds
Number of infusions: 10-12
