China's Yunnan province is well-known for its big-leaf varietal Tea plant. The Camellia sinensis var. assamica grows into a big tree over the centuries and gives quite meaningful teas. Our producers on the Da Xue Shan (大雪山), Big Snowy Mountains hand-picked the leaves with great care from the 200+ years old tea trees. In the case of white tea making, they withered the leaves, then immediately dried them, thus producing outstanding teas with as little as possible process. They pressed this tea to 357 grams bings or cakes, to give them the opportunity for long-term aging. Fresh, fragrant notes, sip reminiscent of apricot, and as the years pass the world of taste turns into deep, mature notes. Really interesting journey.

Steamed gaiwan: floral and aged white tea notes
Tastes, feeling: vanilla, apricot jam. Creamy mouthfeel. Its complexity inspires you to brew it again and again, take your time to explore this tea.

Quantity: 5-6 grams per 150 ml
Water temperature: 85ºC. From fresh, spring water, or filtered water
Brewing time: 10-15…seconds
Infusions: 8-12
