Himalayan Spring is an early spring First Flush black tea with floral green notes. Picked in the first weeks of harvest, it contains many buds and tender first leaves. The slight rolling and oxidation keep the tea reminiscent of green and white teas with a citrus aftertaste typical of black teas.
Every Nepali tea we have originates from the organic Jun Chiyabari tea garden, located in the Himalayas around 1800 meters above sea level. Due to this clear-out area, in every tea there lies a deep elation.
Steamed fragrance with notes of ginseng, turnip, meadow flowers and biscuit. The first brew at 85 degrees for 20 seconds gives the sensation of chewing fresh wheat stalk. For the second infusion, the temperature is reduced to 80 degrees with a 20 second steeping time. A citrusy, hoppy bitterness emerges, with hints of cooling minty, balsamic notes, with a ginseng character lingering behind. The next 30 and then 40 second infusions bring small chamomile, biscuit, hazelnut, pear compote flavours. Finishing it with a 90 degree steep for 1 minute, adds an exciting kick to the tea. We like to drink it in sunshine and summer rain. The start is buttery silky, while the finish is a wildflower, IPA, refreshing experience.
