武夷山 - 正岩 Wuyi Mountain – Zhengyan Fujian province

A new tea in our selection, highly recommended by our tea farmer friend as being very popular now for introducing rock teas.
Huang Guan Yin (黃觀音) variety is a later developed Wuyi oolong. This cultivar was introduced in the year 2003 the by Fujian Tea Research Institute in the Wuyi mountains. Huang Guan Yin, which literally means "Yellow Goddess of Mercy", is a cross between two famous cultivars; Huang Jin Gui and Tie Guan Yin. Different from most other Wuyi teas Huang Guan Yin is only light roasted over charcoal. This way the HGY always resembles the original taste of the fresh leaves and carries a great flowery aroma.

Wuyi teas have two major idiosyncrasies: First, they are plucked only during Spring, and second, they are baked multiple times: at harvest time, then once again a half year later in mid-September.

The Wuyi Mountains are situated in Fujian Province, China. With its more than a thousand-year-old history of tea cultivation, and approximately 200 different varieties of the tea plant (Camelia sinensis) the area is listed as a UNESCO World Heritage Site. The mountain’s volcanic nature reappears in the character of the tea: fiery, vitalizing ambiance and strong chaqi (茶氣).

Quantity: 5-6 grams per 150 ml.
Water temperature: 95ºC. From fresh spring water or filtered water.
Brewing time: 3-5-7…seconds
Infusions: 6-8
