This refreshingly fresh and full-bodied Bai Mu Dan is available in a square-pressed form for two reasons: the leaves ripen more slowly in this form, so they retain their exciting flavours for longer, and the size of around 5 grams is just right for the one serving of tea you need. Aside from the beautiful shape and variegated colour of the beautiful leaves, which make for a very visual experience, this tea is really great in the white category. It's dynamic, it's uplifting, but it also has a calming quality. A spicy touch makes it exciting.

The tea opens with the scent of nettles and celery - a restrained herbal atmosphere with dried flowers, notes of apple, chamomile and a refreshing acidity. Its acids are strikingly beautiful. The taste is as if a croissant was left to soak in milk for a little longer when baking. It has good proportions and structure. A dynamic white tea; it has a restorative effect with a calming feeling. The reason for pressing the tea into a square shape in this case is twofold: the tea leaves ripen more slowly in this pressed form. Also, the 5 gram size is just the right amount of tea to make, and the beautiful leaves make for a great visual experience. A well balanced tea in the white category.

Quantity: one piece, 5 gramm per 180ml
Water temperature: 85ºC. From fresh spring, mineral water or filtered water
Brewing time: 20-30… seconds
Infusions: 5-6

Suggestion:
Due to the pressed nature of this tea, it is advisable to steep it for half a minute, then cover and allow it to steam for 4-5 minutes before the first infusion. The rich flavours will emerge and an autumnal picture of life will unfold in the gaiwan.
