Thanks to its variety and production method, this is an exceptionally fragrant tea, like a bouquet of flowers. Its dense flavour profile is characterised by a light sweetness and a slight spiciness, which later develops into vibrant floral and fruity notes. A great choice for spring and quiet Sundays.
What is particularly interesting about this tea is that it is made from a variety used mainly for the legendary Red Jade Black Tea, the Taiwanese Hong Yu (红玉) or T-18. This variety is beautifully fragrant and can withstand relatively high temperatures with excellent results. The hand-picked leaves and buds were regularly aired during the withering process to maintain freshness. Then, unlike other white teas, the leaves are carefully rolled to enhance the tea's exquisite fragrance. This white tea produces darker and much more fragrant leaves, you could even call them white oolongs.
The steamed aroma has notes of sweet pumpkin, tiger balm and mint.
On the palate, elegant floral notes recall a midsummer meadow. In addition to the floral notes typical of white teas, there are also notes of lily, honey, sweet potato and toasted fennel. It is also worth experimenting with 85ºC and 90ºC, keeping an eye on the bitterness and reducing the infusion time if necessary.
